A 400-key all-inclusive serves thousands of meals and washes tonnes of linen every day. When the main kitchen, the banquet kitchen or the laundry is undersized, badly ventilated or worn out, it shows in the guest experience and the staff turnover. We rebuild back-of-house areas to work at full occupancy, often while the hotel keeps serving.
Flows from receiving to plating, sized for peak banquet nights.
À la carte and buffet kitchens next to each restaurant.
Chilled and frozen storage, dry stores and receiving docks.
Hoods, ducts and fresh air that keep kitchens bearable at 35°C.
Washers, dryers, ironers and folding with water, steam and drainage sized correctly.
Grease interceptors, laundry water treatment and reuse.
We phase kitchen works with temporary kitchens or by line, and plan laundry upgrades with temporary outsourcing for a few weeks. Floors, drainage and extraction are where old kitchens fail; we rebuild those properly, not just the equipment.
| Area | Typical scope | Cost (MXN) |

| Outlet kitchen | Restaurant kitchen | $1.5M–$5M |
| In-house laundry | Building, installations, water | $4M–$15M |
